What better way to say summer than with a Georgia style peach cobbler.
Ingredients:
- 4 cups peaches, peeled and sliced
- 1 tablespoon lemon juice
- 1 egg
- 1 cup sugar
- 1 cup all-purpose flour
- ½ teaspoon salt
- 6 tablespoons butter, melted
Directions:
1. Any easy trick for peeling peaches is to blanch them in boiling water for 1-2 mins. Then let them cool and peel.
2. Preheat oven to 375
3. Place sliced peaches in a lightly greased 8-inch square baking dish and sprinkle with lemon juice.
4. Mix dry ingredients (flour, salt and sugar) and sift into a bowl. Make a well in the middle.
5. Beat egg and add to the dry well.
6. Mix egg with the dry mixture (best to use your hands) so it’s fully incorporated and the mixture looks like crumbs. Note: If the mixture is too smooth/wet add a bit more flour.
7. Sprinkle the mixture over the peaches and drizzle with the melted butter. Note: Up until this point you can make ahead (up to 24 hours). If you make ahead make sure to let the mixture stand at room temperature for at least 30mins prior to baking.
8. Bake 35 mins or until light brown and bubbly. Serve warm.
Notes:
You can substitute peaches with other fruit like raspberries, boysenberries etc.
